Ingredients:
1 cup finely chopped French beans
1 cup finely chopped French beans
1 cup finely chopped carrots
2 tbsp chopped onions
¼ tbsp. mustard
1 tbsp urad dal
4 dry red chillies
4-5 curry leaves
2
tbsp dry or fresh coconut flakes
1/4tbsp turmeric
Salt as per taste
2 tbsp cooking oil.it takes very
less oil for this fry
2 cups of water
Method:
- Wash and boil carrot and beans in 2 cups of water till they turn soft but not mushy. Strain and keep aside to cool
- Switch on the stove and keep a pan
- Add two tbsp. oil and when the oil is hot
- Add urad dal and red chillies
- Add mustard and curry leaves and fry for a min
- Now add chopped onions, turmeric and salt. Mix well and fry till onions are translucent
- Now add boiled carrot and beans and stir well. Cook for 5min.
- Now add coconut flakes and fry for 5 more min. Switch off the heat
The curry is now ready to be served.
This very healthy fry goes well with roti, white rice, can be used as a
stuffing for sandwiches or can be eaten directly as an evening snack.
