Bittergourd(kakarakaya) simple Fry

Ingredients:
Bittergourd (kakarakaya) - 4 (wash and cut them into really thin slices)
Curry leaves - 5
Red chilli powder - 1 tbsp
Salt as per taste
Turmeric - 1/4 tbsp
Peanuts- 1 tbsp
Oil for frying - 1cup

Method:

  • In a pan, add 1 cup of oil and when it is hot, add bittergourd slices and and deep fry till they are crisp
  • Strain and keep aside
  • In a pan, add 1 tbsp oil and when it is hot, add peanuts and curry leaves and fry for 2min.
  • Add fried bittergourd pieces to the pan, red chilli powder, salt and turmeric and stir well and fry for 2 more min and switch off the stove. Very tasty Bittergourd Fry is ready!
Goes well as side dish with Dal and Rice!
